Name: CHARDONNAY FRIZZANTE IGT (sparkling white)
 
ALCOHOL CONTENT:  12% volume
 
GRAPE VARIETIES USED: : 100% Chardonnay.
 
PRODUCTION AREA AND EXPOSURE: Piave River basin south-east of Treviso.  
 
SOIL TYPE: basically clayey-calcareous, rich in skeleton and with a good balance of humus.
 
TRAINING SYSTEM: Sylvoz.
 
VINTAGE: harvested by hand into crates at the end of August/beginning of September.
 
VINIFICATION: soft pressing of the grape with cold settling of the must (5-7 °C), followed by alcohol fermentation. Stabilization of the wine if necessary for refermentation.
 
SECOND FERMENTATION: in pressurized tank (Charmat method) for approx. 1 month at a temperature of 13-14°C in order to bring out the aromas and freshness to the full.  
 
ORGANOLEPTIC CHARACTERISTICS: pale straw yellow in colour with fine beading. Polished bouquet reminiscent of golden delicious apples and freshly-baked crusty bread. Well-orchestrated, velvety flavour with an inviting acidity which brings out its fresh, crisp taste to the full.
 
SUGGESTED PAIRINGS: excellent with starters, delicately-flavoured dishes, fish and shellfish. Perfect as an aperitif.
 
HOW TO SERVE: at a temperature of 10-12° C, in flûtes.
