NAME: VERDUZZO FRIZZANTE IGT (sparkling white)
ALCOHOL CONTENT: 12% volume.
GRAPE VARIETIES USED: 100% Verduzzo.
PRODUCTION AREA AND EXPOSURE: Piave River basin, south-east of Treviso.
SOIL TYPE: soil texture rich in skeleton (shale) with clay, poor in organic substance.
TRAINING SYSTEM: Sylvoz and Guyot.
VINTAGE: harvested by hand into crates in late September.
VINIFICATION: destemming and cold maceration on the skins overnight, clarification of the must and alcohol fermentation.
SECOND FERMENTATION: in pressurized tanks (short Charmat method) for approx.1 month at a temperature of 13-14°C in order to bring out the aromas and freshness to the full.
ORGANOLEPTIC CHARACTERISTICS: classic golden yellow colour, with minute, lingering beading; intense, fruity fragrance with overtones of almond, pear and apricot. Sweetish palate with a distictive hint of tannin which makes it extremely pleasant with dry sweetmeats.
SUGGESTED PAIRINGS: well-worth trying with creamy blue cheeses; also excellent on its own.
HOW TO SERVE: at a temperature of 6-8° C in long-stemmed, tall glasses which exalt the subtle beading.
