NAME: CHARDONNAY DOC PIAVE - white

ALCOHOL CONTENT: 13%.

GRAPE VARIETIES USED: CHARDONNAY 100%

PRODUCTION AREA AND EXPOSURE: vineyards of Campo di Pietra in the Piave River basin south-east of Treviso. The grapes are from vines with an average age of 18 years.

SOIL TYPE: caranto, a clayey type of terrain which derives from the crumbling of sedimentary rocks.

TRAINING SYSTEM: Guyot

VINTAGE: harvested by hand into crates in two different periods ten days apart in order to achieve greater structure and more complex aromas.

VINIFICATION: soft pressing of the whole grape, partially destemmed and subjected to cold maceration for several hours. Cold settling of the must followed by fermentation at a controlled temperature of 15-17° C.

MATURATION AND AGEING:  matured on yeasts for six months before bottling.

ORGANOLEPTIC CHARACTERISTICS: straw-yellow colour with greenish tinges; fruity fragrance reminiscent of banana and mature apples, with overtones of acacia honey and crusty bread.

Crisp, well-balanced taste, with plenty of character and a pleasantly lingering finish.

SUGGESTED PAIRINGS: this superbly elegant wine is ideal for enjoying on its own or as an aperitif; also perfect with starters, fish, egg and rice dishes.

HOW TO SERVE: at a temperature of  8 – 10° C in quality white wine glasses.
