NAME: TAI DOC PIAVE - white
ALCOHOL CONTENT: 12% volume.
GRAPE VARIETIES USED: 100% Tai (ex-Tocai).
PRODUCTION AREA AND EXPOSURE: Piave River basin, south-east of Treviso.
SOIL TYPE: good balance of clay and limestone components, rich in skeleton, with a yield of 100 quintals per hectare.
TRAINING SYSTEM: Sylvoz.
VINTAGE: Harvested by hand into crates in mid-September.
VINIFICATION: soft pressing of the grapes; alcohol fermentation at a controlled temperature with the addition of selected yeasts.
MATURATION AND AGEING: fine lees contact for a few months, avoiding malolactic fermentation. Aged further in the bottle before sale.
ORGANOLEPTIC CHARACTERISTICS: fine soft yellow colour tinged with gold; classic almondy fragrance with a hint of flowers. Crisp on the palate, its excellent balance bestows a velvety flavour which makes it desrving of its nickname of “king of starters”.
SUGGESTED PAIRINGS: sublime with raw ham, also excellent with delicate fish dishes and soups. Classic aperitif in our local area.
HOW TO SERVE: at a temperature of 10-12 °C.
