Cabernet DOC Piave

Alcohol content: 14 % vol.


Variety: Cabernet Franc and Cabernet Sauvignon.


Production zone: vineyards of Campo di Pietra, Piave river basin, to the south east of Treviso


Terroir: well-drained soils rich in organic matter ideal for making fine, elegant wines.


Training system: Guyot and short Sylvoz, with a yield of 8,000 kg per hectare.


Harvest period:  to obtain the best quality, green harvesting is practised, whereby clusters of grapes are thinned whilst stillgreen, which ensures remaining grapes receive greater nutrition. Hand-picked into crates. The grapes are harvested when fully mature and late, to round off the hallmark grassy overtones of Cabernet Franc.


Vinification: destemming and pressing of grapes; rapid activation of alcoholic fermentation with maceration for approx. 12-15 days with daily delestage. Malolactic fermentation completed in barriques.


Maturation and ageing: In French oak barriques for more than a year and in large oak barrels for several months. Further aging in the bottle for one year.


Sensory characteristics: the quality of the grapes, the very close attention paid during the method of working to preserve the elegance and structural characteristics of the two grape varieties, the aging technique and the quality of the woods used have made the Cabernet Riserva a wine of great structure, rich with spice and vanilla notes.


Food pairings: Ideal with select, full-flavoured dishes, red meats, game and mature cheeses.


Serve at 16 – 18°C in wide-bowled glasses.
